Mark and Becca Sperry

From Our Family to Yours

Hi! We're Mark and Becca Sperry, the husband-and-wife operation behind the honey and wax. We're based in North Dakota, and our family has been beekeeping since the 1920's. We take pride in producing honest, high quality honey and beeswax straight from the hive.

Our Full Story

Third-Generation Beekeepers

1920's

Our family has been keeping bees since the 1920's.

1950

Cover of 'American Bee Journal' from November 1950 featuring Everett Sperry with a beehive.

In fact, Mark's grandpa (P. Everett Sperry) was actually a Kansas state representative.

He raised a few hives of bees on his farm, as well as various other animals.

The 70’s

In the 70’s, he wrote letters to Congress on behalf of the U.S. honey producer, trying to get better prices for the honey produced here in the USA.

1961

His sons Ken and Bryan started Sperry Apiaries back in 1961.

1993

Mark purchased the business from Ken (his dad) in 1993, and we run it right here in North Dakota to this day.

Raw Unfiltered Honey

Your search for real raw honey is over.

Most honey on shelves is overly processed, leaving it stripped of real flavor and nutrients. We keep ours raw and unfiltered, just as it comes from the hive in North Dakota, with natural pollen, enzymes, and richness intact. It spreads thick, stirs smooth, and brings bold flavor to every use.

Who is this for?

Our raw honey is great for those who want the real stuff. Nowadays, it can be hard to find raw honey that's actually raw. You know how to tell? Crystallization. Since this honey isn't heated, it crystallizes naturally, and that's exactly what you want. The bold flavor of raw honey speaks for itself... rich, pure, and delicious. Enjoy!

Panda Express Copycat Honey Sesame Chicken

Honey Sesame Chicken

Crispy chicken, a sweet and tangy honey sesame sauce, and fresh stir-fried veggies make this dish absolutely delicious. Best of all, it takes just 25 minutes to make!

Ingredients

For the Chicken
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Vegetable oil, for frying
For the Honey Sesame Sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 cup water
  • 1 tablespoon cornstarch, mixed with 2 tablespoons water (slurry)
For the Stir-Fry
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 yellow bell pepper, chopped into bite-sized pieces
  • 1 cup green beans, cut into 1-inch pieces
For Garnish
  • Sesame seeds
  • Sliced green onions

Instructions

  1. Prepare the Chicken In a large bowl, mix the cornstarch and flour. Dip the chicken pieces into the beaten eggs, then coat them in the cornstarch-flour mixture. Ensure each piece is well-coated.
  2. Fry the Chicken Heat about 1 inch of vegetable oil in a large skillet or wok over medium-high heat. Once the oil reaches 350°F, fry the chicken in batches until golden brown and cooked through, about 3-4 minutes per side. Remove the chicken from the oil and drain on paper towels.
  3. Make the Honey Sesame Sauce In a small bowl, whisk together honey, soy sauce, ketchup, rice vinegar, and sesame oil. In a separate bowl, mix cornstarch and water to create a slurry. In a saucepan over medium heat, combine the honey sauce mixture and water, bringing it to a simmer. Add the cornstarch slurry and cook until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.
  4. Stir-Fry the Vegetables In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high heat. Add minced garlic and stir-fry for 30 seconds until fragrant. Add the bell pepper and green beans, cooking for 3-4 minutes until tender-crisp.
  5. Combine Everything Add the fried chicken pieces to the skillet with the vegetables. Pour the honey sesame sauce over the top and toss everything together until well-coated and heated through. Garnish with sesame seeds and sliced green onions.

This crispy, sweet, and savory honey sesame chicken is perfect over steamed rice or noodles. Enjoy a better-than-takeout meal right at home!

How To Cut Beeswax

Having fun with that knife yet? Don't worry, I found two much easier ways to cut beeswax.

One of the easiest ways to cut beeswax is the hammer method. Just freeze your block for 24 hours, wrap it in a few plastic bags, and hit it with a hammer a few times. Or, use a mallet and chisel if you want more square chunks.

What You'll Need:

  • Freezer
  • Hammer
  • Plastic Bags
  • Chisel (optional)

Option 1: The Hammer Method

Beeswax block on a white background

Voila. Beautiful Beeswax Chunks.

Option 2: The Chisel Method

  1. Step 1: Same as the first option, put your block in a plastic bag. Keep it in the freezer for about 24 hours.
  2. Step 2: After about 24 hours, lay an old towel down on a hard, flat surface like concrete. Take the beeswax out of the freezer, and place it in the middle of your towel.
  3. Step 3: Place your chisel about two inches from the edge of the block (or however large you want your chunks). Take your mallet or hammer and softly tap the chisel until a chunk breaks off.

"Will the Freezer Damage the Beeswax?"

No! By nature, beeswax is waterproof. Once your chunks are brought back to room temperature, they may be a bit damp, but they'll still be ready to melt. If you're concerned, you can always take a paper towel and dry up the small amount of condensation. It's probably best to dry your beeswax chunks immediately if you live in a place where mold is an issue (shout out to my fellow Floridians 🏖️).
